you guys, i know it may seem like i post a lot about this vegan shiz, but since summer school ended (hallelujah!) i haven't really done much but sit around and work and eat. so naturally this blog is transforming into a vegan haven. muhaha. but look! a recipe! inspired by a vegan cafe, replicated by brad and i.

for the peanut sauce:
(we guestimated most of this, like all good lazy cooks do)
1/2 cup creamy peanut butter - i used organic and unsalted 
about 1 teaspoon red pepper flakes 
about 1 tablespoon blue agave
juice from one lime
2 cloves garlic
heat everything listed above on low in a sauce pan. the peanut butter will clump and harden, once that happens begin adding water in small increments until you reach desired consistency. 

for the rest:
brown jasmine rice, cooked - make as much or as little as you need 

chop the tofu into small chunks and cook in a frying pan. it will sort of look like cooked scrambled eggs when it's done.
in a bowl place a bed of raw spinach, add some hot rice on top, then some tofu, and top it all with the warm peanut sauce. 

mix it all together and viola! warm-bellied-vegan you are.
