i'm alive! and look! scones! look how casually i can just swoop in on this blog without posting for weeks with a "look what i have!" anyways, here are some scones. all the bitches love pumpkin, am i right? 

pumpkin apple scones (dairy free) 

2 and 1/2 cups all-purpose flour
1 cup oats
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1 stick butter, cold and cut into cubes (I used EarthBalance)
3/4 can pumpkin puree
2/3 cup almond milk
1 egg
1 apple, peeled and diced

1/2 cup powdered sugar
1/4 cup almond milk

1. mix together the flour, oats, baking powder, baking soda, salt, and pie spice in a medium size bowl.
2. add the butter and blend with fork until the mixture resembles coarse meal
3. mix together the pumpkin, almond milk, and egg in a small bowl
4. add the egg mixture to the flour mixture and mix until well combined. fold in the apple.
5. heavily flour a flat surface and place the dough on top. coat your hands in flour and gently spread the dough across the surface to form a rectangle about 1/2" thick.
6. cover a sharp knife in flour and cut across the rectangle 3 times and once down the middle. this will give you six rectangles of dough. cut those rectangles diagonally so you have triangles. that was a lot of geometry. 
7. place the scones on an un-greased baking sheet. bake at 350 degrees for 15-17 minutes or until they are firm. let cool on a metal rack completely.
8. mix the powered sugar and almond milk together to make the glaze. 
9. once the scones are completely cool, use a fork to drizzle the glaze over the top.

i never know how to end recipe post? um, if this were twitter someone would probably be like, "pumpkin >>>" because apparently the fact that inequalities have to have a value on both sides missed today's generation. (side note: i have always sucked at inequalities and seeing them on social media really throws a girl you know?)
